Karen Jamieson has the right approach - teaching her child how to be responsible for her own allergy and health whilst still overseeing the situation. I have had a severe egg allergy since I was a baby, and I'm in my mid-20's now. I also had a dairy allergy that I grew out of around 7 years of age. I remember as a small child starting school and knowing what I could and couldn't eat, and being able to ask to the right questions of adults to guide my eating. If I was going somewhere where the majority of the food would have egg (for example, at a children's party with cakes, chocolates etc), my parents would send me with a lunchbox so I wouldn't starve!
Because of their approach, I have not in my memory had to experience anaphylaxis, it is something my parents endured that I cannot remember, because I was too young.
I also know there is a high probability of my children having food allergies, and I had always planned to proceed with caution during my pregnancies to try and prevent my children developing food allergies. But if they were to, I would handle it the same way as my parents handled mine, because at the end of the day there are SO many hours of the day that your child is out of your sight, and you have to be able to prepare them to manage it on their own - even from a very very young age. Kids are smarter than you think.
